Chicken, Sundried Tomato and Red Onion Spaghetti

I made this meal in the last few weeks of university when I had no money left and was trying to use up the last few scraps of food in the fridge... as it turned out it's actually something I have made lots since because its so easy and tasty!



Ingredients for one.

One chicken breast cut into long thin strips.
50g sundried tomatoes finely chopped
Half a red onion finely sliced
Spaghetti for one
Parmesan to grate on top (lasts ages in the fridge)


Bring a saucepan of water to the boil, season with salt and add spaghetti. Time for 9-10 minutes.
Melt some butter or cooking oil in a pan on a low heat and soften down the tomato and onion for a 2-3 minutes.



Add the chicken strips and increase the heat, continuing to stir for 5 minutes, so that the tomato and onion don't burn.



When the spaghetti is ready- always taste if you're not sure- add a couple of tablespoons of the cooking water to the chicken and drain the rest.



Let the water reduce down so you have a slight sauce coating the chicken, tomato and onion.



Add the pasta, stir, place on a plate and grate parmesan on top... It really is that easy! Enjoy with a glass of wine in front of the tv for a quick mid week indulgence.
